Cold Brew

It is yet another cold-brew guide. So it just an infusion method. So one of my ex-colleague and teammate from Canada show me the magic way to brew coffee concentrate. At this point, my journey begins.

Why

It is just a full a new taste of casual drinks.
To be honest is started due to my crazy laziness. You could do once a week on weekends an concentrate and speed up your morning routine. Get up. Grab a 1/4 of cold brew coffee put hot water and run away.

If you have issues with the stomach like an asidity reflux - so it is not recommended to consume a coffee at all. Cold brew is a safety solution. Cold water does not extract acid fraction.

One more big topic is summer. As far as it cold brew you get a cold or ice cold beverage. Especially white tea is fantastic at summer time.

How

You grab some herb or etc. and put it to cold water for some period of time.

Algorithm is simple

  • scale in a proper ratio of coffee/herb
  • Grain if needed
  • put cold water
  • store in a fridge
  • filter
  • enjoy && store in a glass bottle

French press

You could buy a lot of fancy tools, but all you need is a french press on practice. I tried a lot of methods even purchased a strainer and some cold brew sets, but the French press is the cleanest and comfortable way to get the same results.
IKEA do a neat job. It is cheap IKEA french press..

If you are really keen to spend money and have fancy stuff.

Scales

I prefer ещ follow recipes and do a measurement. The most common tool in the kitchen for this is electronic scales. In a coffee shop, you could find extremely expensive scales. I use one from Rossman or dm shop that I bought 5 years ago.
I really believe in a common seance and pick staff that simple & working.

Stainer

Filter, Filter, and filter one more. When your brewing is ready the critical quality of end drink is filtering. To avoid unexpected particles lets just screen. If you still don’t have a stainer - it is time to buy one.

One more option the coffee or tea filters usage after. In this case, you get a much cleaner result.

Storage bottle with coark

The best for storing a brewing is a glass bottle with a cork. Pls, avoid plastic or metal.

Temperature

I always use the fridge. Mostly I put a french press on fridge doors. Temperature is important. The lower it is, the slower extraction will go. So for coffee, i use 24-hour brewing.

One more way is sun tea. When you brew your team on room temperature or even put it on a sunny balcony. It will work much faster. In the case of room temperature brewing will be faster but could be intense.

It is not only about coffee!

Water

Remember that to do a cool beverage is 95% of success is water.You should pick the coolest ingredients. We all forget that the key ingredient is water. Good water is a key. I am lucky that I live in Berlin. Berlin has quite a good tap water. Save your money and time - drink tap water if you are in Berlin in 2018. Research summary (DE). I am originally from Lviv, and their water let say is far from good. Mainly due to an Austrian empire times water supply system and just believe me the Soviet time’s water supply system is way far more horrible. The Chlor substance is used for disinfection. For me, only one way to get quality water was eSpring filter. Big warning at Ukraine bottled water is not a guarantee of quality, sometimes is same as a tap.

Mineral water is not always a healthy choice. Dot really drink it all the time. It could lead to overdose Ca and other minerals.

One more key measurement is pH. It ideally should have 7 pH. You could test it your self with a lacmus stripes. Latest years a lot of noise happen around some special alkaline water that has pH around 8-9, but I didn’t find any proof that of health benefits. Skyrocket price and questionable benefits.

Coffe

Initially, I tried this with a coffee.

So you need a big french press 1 Litter and 125 gram of coffee beans. I like to use beans instead of grounded coffee. First of all for cold-brew is better to use sugar like ground coffee. In the case of powdery grind, it could be over extracted. The ratio 1L to 125 g (1:8)is my personal preference for concentrate than I use it 1:1 for drinks. General reply suggests 250 gram per 1 Litter or 1:4.

I use Ethiopia dark roasted one.

Concentrate Recept

  • Grain (sugar-like ) 125 g coffee beans.
  • Put 1L ice cold water into a coffee.
  • stir a bit
  • put to a fridge for 24 hours
  • filter with a strainer
  • filter with a coffee filter
  • put in a glass bottle with a current date sticker
  • store up to 7 days

Coffe Recepte

  • Mix 1:1 with almond milk. You could make it warm or hot.
  • Mix 1:1 with milk or water.
  • Mix 1:1 with tonic water.

Cacao Nibs

So you enjoy coffee for a while. One more cool drink is cold brew cacao nibs. Cacao is not about something sweet. It is a taste of life.

Cacao receive

  • Take a 3:1 cacao nibs concentrate to whiskey.
  • Take 0.5(cacao brew): 0.5 (coffee brew): 1 (milk).

Tea

One sunny day. I was walking around my office and meet a tea shop (Paper & Tea). I reach the there really cool person that offers me a cold brew green tea.

We had a long chat about it.

I really suggest reading a cool guide from folks.

So my favorite is green brewing & a bit of orange cedra.

For me, the most significant discovery was a white tea

Yerba Mate

I could talk for hours about yerba mate. I think I will do a series of posts about it.
If you are brave, try a cold brew mate. The best is to pick a terrere mates.
My favorite is Meta Mate 23.

Recepte

  • take 3 Tablespoons of Mate 23
  • 1L of ice cold water
  • 8 hours in a fridge.
  • stain it
